Quick meals and recipe ideas

We recently discussed "Quickies in the kitchen: nutrition for breastfeeding families". Here are some of the recipes shared on the day.

General tips to save time:

  • Double recipes when you can and freeze half for "one of those days"
  • Plan ahead - if your partner will be late on Tuesday make sure to make enough on Monday for leftovers the next night!
  • Make recipes like stir fry or fried rice on the day before shopping to use up all the leftovers
  • Freeze leftover vegetables at the end of every meal and make vegetable soup out of them

Fish (or chicken) fingers

Ingredients: Fish or chicken breasts, egg, flour, bread crumbs, oats, parmesan, lemon rind, parsley.

Cut fish fillets (make sure bones are removed) or chicken breasts into strips (about the size of normal fish fingers). Put flour into one bowl, beaten egg into another bowl, and a mix of bread crumbs, oats, parmesan, lemon rind and chopped parsley (and whatever other seasonings you like) in the third bowl. Coat each piece of fish/chicken in the flour, then dip into the egg, and then coat in the bread crumb mix. Shallow fry in a fry pan until crispy.


Gnocchi (gluten free)

Ingredients: 2 1/2 cups mashed potatoes, 2 lightly beaten eggs, salt, 280g sifted plain gluten free flour.

Mix potatoes, eggs and salt in a bowl. Drop in 1 1/2 cups flour and stir well. Turn out and knead in the rest of the flour. Divide into sausages and cut pieces into a small rectangular shape. Flatten with a fork. Drop into boiling water and when they rise rescue with a slotted spoon.

Impossible Savoury Pie

Ingredients: 6 eggs, 2 cups milk 1/2 cup SR flour, 20g melted butter, generous amount of bacon/tomato/tuna etc, grated cheese for topping.

Combine all ingredients well and pour mix into greased casserole dish. Bake 50 mins in a moderate oven (180 degrees). Called "impossible" as the base creates itself as it cooks.

Puff Pie

Ingredients: 210 g pink salmon (drained) OR chicken OR whatever else is in the fridge, 1/2 cup grated cheese, 1 onion finely chopped, 4 eggs, 1/2 cup SR flour, 60ml melted butter, 2 cups milk, salt and pepper.

Place salmon/chicken/etc cheese and onion in greased 10 inch pie plate and mix together. Mix remaining ingredients with beater. Pour over salmon/chicken mixture. Bake for 40-45 minutes until set.

Zucchini slice

Ingredients: 375 g zucchini (one super large or a few medium) (you can add other grated veg too), 1 large onion, 3 rashers bacon, 1 cup grated cheese (cheddar & parmesan), 1 cup SR flour, 1/2 cup oil, 5 eggs, salt, pepper

Grate zucchini. Finely chop onion and bacon. Lightly beat eggs. Combine all the ingredients, folding in the flour at the end to not overwork it. Pour into a greased or lined tin. Bake 30-40 minutes in a moderate over.

Orange Almond Friands (gluten free)

Ingredients: 150g melted butter, 3/4 cup almond meal, 4 egg whites (lightly beaten), 2 teaspoons finely grated orange rind, 1 1/4 cups icing sugar, 1/3 cup plain flour.

Grease 2 x 12 hole muffin pans. Combine butter, almond meal, egg whites, rind and combined icing sugar and flour in a bowl. Stir until combined. Divide mixture into muffin pans. Cook in a moderately hot oven, 190 degrees for about 20 minutes. Wait for about 5 minutes then turn onto a wire rack.
